Dakkous - Flavor Beyond Borders
Dakkous is an Arabic sauce usually used to mix with rice. It is spicy and amazingly red. Once prepared, this sauce can go into the refrigerator and be used as and when required for 2 to 3 days. I have not used any preservatives or local ingredients available fresh in the Indian market. I have used tomato paste instead to give brilliant red color to the sauce.
Ingrediants
- 15ml Sunflower Oil
- 2cloves (10gr) Fresh Garlic, crushed
- 250gr Ripe Tomatoes, skin removed and chopped
- 2.5ml Cumin Seeds toasted and crushed
- 15ml Tomato Paste
- 2 Fresh Chili, seeds removed and chopped
- 1 Freshly squeezed Lemon Juice
- Fine Salt
- Freshly grounded Black Pepper
Directions
- Heat the oil in a pan, add the garlic, and cook for a few seconds.
Add the tomatoes. - Cover and simmer on low heat for about 30 minutes or until the tomatoes are soft.
- Add the remaining ingredients and cook with the lid off for about 2 minutes, then remove from the heat.
- The sauce can be stored in a sterilized glass bottle in the fridge and heated as needed.
Serving
- serve it with Mandi Biryani and eat it with plain white rice or pulao. The taste will be amazing.
